Ingredients
- 1 tsp olive oil
- 2 onions, peeled and finely chopped
- 1 red pepper, deseeded and finely chopped
- 1 orange pepper, deseeded and finely chopped
- 1 red chilli, deseeded and chopped
- 1 garlice clove, peeled and chopped
- 2 x 400g tins cannellini beans
- 2 x 400g tin organic soya beans
- 2 x 400g tins chopped tomatoes
For the cheese pitta toasts:
- 4 Warburtons soft brown or white sandwich pittas
- 80g gruyere cheese, finely grated
Directions
- Heat the oil and fry the onions, peppers, chilli and garlic until soft, this will take about 10 minutes
- Add the beans and tomatoes and simmer gently for 20 minutes
- Preheat the grill to medium. Cut open the Warburtos Pitta Breads to make 2 halves, cut each half into half again the cut each half into 3 triangles (to make 6 triangles from each half Pitta). Put the Pitta triangles upside down on a baking tray and grill for a minute or 2, turn over and sprinkle the cheese over the top and grill until the cheese has melted
- Serve the cheese toasts with the baked beans
