When it comes to preparing food Mr Boo and I are like yin and yang. Whilst Mr Boo is more than capable of producing a magnificent meal, I on the other hand aiftedm more talented in making a few biscuits, cakes and scones. You see when I was younger, both my Mam and my Granny used to do a lot of baking so I managed to pick up how to make sweet treats. Cooking however, I did not. This is where Mr Boo comes into his own with chefs for parents I’m pleased to see that some of their knowledge has rubbed off on him and he can make a fabulous roast dinner etc.
So whilst Mr Boo may be gifted in the cooking department, baking is not his strong point so when Renshaw Baking contacted me to challenge my loved ones to show me how much they love me by baking me something special I did wince at the thought of burnt, inedible cake. However, Roo loves to bake alongside me so I replied say that we’d love to take part in the hope that she could teach Daddy a new trick or two.
We were given the choice between a Cupcake Frosting Pack or a Biscuit Icing Pack, I opted for the cupcake pack hoping that if I give Mr Boo my foolproof cupcake recipe he should hopefully be able to pull this off.

When making cupcakes at home with the children I always use the same simple recipe for making vanilla cupcakes. I prefer to add a couple of drops of vanilla essence to my cupcake mix as then no matter how you decorate them your sponge has that little extra flavour.

If I’m honest this was the bit that I was less worried about, after all using one of the snip and share icing bags that we received they couldn’t exactly go wrong… Could they?
Apart from a few over zealous moments with the toppings I think that did quite well, plus they were very tasty too.
