When I was younger my Mam and my Granny always had a sweet treat or two in the pantry ready for whenever anyone called by to see them. Whilst they preferred to have Rice Crispie Cake waiting to treat guests I prefer to have some Rocky Road Treats in the cake tin just in case – plus is a lovely after school treat.
So if you are looking for the perfect chocolate treat to share with guests, for the school bake sale or a tea time sweet treat then why not try these easy to make Rocky Road Treats.
Rocky Road Treats
Ingredients
- 125g Soft butter
- 350g Chocolate (200g plain, 100g milk & 50g white)
- 3 Tbsp Golden syrup
- 200g Shortbread biscuits
- 100g Mini marshmallows
- Handful of glacé cherries or sultanas
Method
- Melt chocolate in a bowl over boiling water
- Melt butter in a saucepan
- Mix butter, chocolate and golden syrup together in the saucepan
- Scoop out about 100ml and save to decorate the top
- Crush the shortbread biscuits
- Add biscuits to the chocolate mixture and mix
- Add the glacé cherries (or sultanas depending on preference) and ¾ of the mini marshmallows, then mix together
- Pour the mixture into a square tray bake lined with greaseproof paper, ensure the mixture is spread out evenly into the corners
- Sprinkle the remaining ¼ of mini marshmallows and drizzle the remaining chocolate mixture over the top
- Place in the refrigerator for at least two hours (or overnight to ensure it has set firm)
- Cut the biscuits into 3cm squares
- Enjoy!
